Poison pots on weapon with keeping your enchantments charged is nice, if you went enchant at all it's nice too. I went lockpick and planning on going pickpocket which holds us back some. I thought about 2h but it's gonna be gimped with sneak points. I want to make a 2h toon at some point and be a melee rockstar.

I like the 50% zoom, but since it slows you down too, it's really too much of a win. Pots are huge -- agreed. But I can't say I ever drink stam pots. When I need to dish out a lot of dmg in a short time, I poison up and drink a true shot pot. But those are only for boss fights, really. My bow has Animus on it, for soul stealing, but maybe I'll enchant another bow with a dmg modifer instead.
I plan on skilling up enchanting (current ~35). I think that'll be huge. Same with smithing (which is already ~65). I hear upgrading your armor makes a huge diff (e.g. 2x the armor).
My lockpicking is in the 60s or 70 now; same with pickpocket. They skilled up *fast* once I started the Thieve's Guild line. I only put a few points into Pickpocket for the increase carry capacity bonus. Nothing in lockpicking. Don't think either are worth spending many points in. Points in Alchemy could be fun, for better poisons and health pots. But I don't think I'll have enough points if I go for Smithing/Enchanting.
I've been increasing my Magicka a lot, thinking I'd be a hybrid thief/caster, but that hasn't really panned out, so I kinda regret that now. Prob shoulda just went straight health and a little stam.
Like you, I'm really looking forward to playing again as a melee and caster. This game has fantastic replayability.
