It's always been like this, just when you watch on TV they cut out all the waiting and most of the time all of the hands that consist of a single pre-flop raise and then everyone folding because, like you've eluded to, it isn't very exciting.

One of the main reasons why this is consistently done is to be just that, consistent. If you were to always snap-call strong, it would be obvious and if you always take a while to mull-over difficult calls it would be obvious the type of hand-range you have. It's always important to conceal what kind of hand you have - and most of the time this is done by taking some time before taking action, even if you already know what you'll be doing.

This is the first time they're showing ALL the action from the final table, and while it might not be super exciting to watch, it gives you a much clearer picture of how players are acting than just the handful of highlights placed into an edited TV show.
